This cake is all about coffee. I made a nice yellow cake, soaked it in espresso and rum, espresso candied pecans for crunch both insidr and out, and once again, a big pile of fluffy swiss meringue.
The pecans were so good they even made their way onto the bananas foster pancakes we had for breakfast.
The best thing about cooking on Mother's Day, is that because I am THE mother, I didn't have to do the dishes!!
